Pol Roger “White Foil”
Brut NV (Bin 806) is a
classic, firm, mediumbodied, chardonnay-driven
style. Long & nutty with
clean minerals.
~~
Bollinger “Special
Cuvée” Brut NV (Bin 825)
Classic wine with
an assertive mouth feel;
perfect for first course
& beyond.
~~
2002 is a great vintage.
The wines have really
matured attractively and
in general are lush wines
and should begin to be
consumed.
~~
Consider a comparative
tasting – a study in
opposites. Lilbert “Blanc
de Blancs – Grand Cru á
Cramant” Brut NV
(Bin 820) Chardonnay
with notes of dusty citrus
candy – dry as a bone. Paul
Bara “Grand Cru Bouzy Réserve” Brut NV
(Bin 818) is Pinot from
Bouzy – big bouncy happy
charming red fruit.
~~
Egly-Ouriet Ier Cru
“Les Vignes de Vrigny”
Brut NV (Bin 839) A
very particular style of
Champagne; robust,
corpulent & complex with
a gentle mousse & precise
acidity; an unusual flowering
herb character to the
aromatics signals the high
100% Pinot Meunier
content of this wine.

Precise, long, fine and
savory; Chablis offers a wide

fantastic beginning to any
meal. Look to Servin for
precision and minerality and
Raveneau for broad fruit and
rich texture.

There's a reason we list so
many Meursault-Perrières
bottlings. While technically a
Premier Cru, it's my opinion
that it possesses Grand Cru
quality & ageability.
~~
Les Combettes is the most
favored terroir in 2009
Puligny-Montrachet Ier
Crus. The wines from the
vineyard show great intensity
and much better length than
many of the other Ier Crus.
Carillon’s (Bin 228) is
mineral, crunchy & fresh.

Condrieu is a tiny
appellation in the Northern
Rhône Valley producing
unctuous & exotic creamy
whites from Viognier. In
2010 where there was great
ripeness, very dense
phenolic material and a
small harvest, the intensity
of expression in these wines
can be jubilant. Cuilleron
offers detailed orange
marmalade & white flowers.
It is spectacular with white
fish like turbot or rockfish
and also with calamari and
cuttlefish dishes and can be
used as a decadent finish
with goat’s milk cheeses.

charming example of the
generous style of Napa

Grüner Veltliner is an
ancient indigenous
Austrian grape that is
very green tea, jasmine,
citrus peel, white pepper
and light to mediumbodied in almost all its
variations. It serves
ideally in the part of the

and with delicious little

fresh red fruit and great

The wines from the
vineyards around the village
of Gevrey-Chambertin are
fueled by dark fruit and a
dark minerality. These
are wines of a particular
masculine and spicy
character. I like them best
matched with organ meats,
richly-flavored & fatty
meats and all manner
of mushrooms.
~~
Two wines of great beauty
from tricky vintages Chambertin Grand Cru,
Nicolas Potel 2007 ( Bin

Lambrays Grand Cru,
Domaine des Lambrays
2004 (Bin 2449) - from
thoughtful and talented
producers with great terroir.
Both are marvelous,
complex, generous and
drinking now.

Hubert Lignier’s brilliant &
sensitive winemaking is what
separates the house above &
beyond many many growers
in the Côte de Nuits. The
Morey-Saint-Denis Ier Cru
“Les Blanchards” Hubert
Lignier 2007 (Bin 2142) is
at once generous & delicate,
precise & exuberant. Dark
iron rich minerals, tart red
cherry pits and a spicy palate
beg for rich and interesting
cooking.

Vosne-Romanée Ier Cru
“Les Chaumes-Vieilles
Vignes” Bernard Rion 2006
(Bin 2221) Rion made a
beautifully aromatic wine
from this historically
important vineyard in 2006.
Complex aromatics include
black fruit, black truffles,
copper and allspice which
lead to a silky, firm and fresh
palate of plump black fruit
that is reinforced by a rich
tannic structure.
~~
Echezeaux Grand Cru
“Les Rouges du Bas”
Méo-Camuzet 2007
(Bin 2418x) Jean-Nicolas
Méo has to be one of the
five most brilliant
winemakers in Burgundy.
His wines display more
power & precision than I’ve
tasted before. Aromas are at
once floral and have a
certain truffley minerality.
The texture is delicate yet
has abundant fine tannins.
It is unusual for him to
make such an accessible
young wine, take advantage.
~~
In 2004 Nuits-SaintGeorges was probably
the most successful village
in what was a particularly
tricky vintage. Please notice

Hermitage is the ancient
home of Syrah in France.
The grape has been
documented to grow there
for more than 1100 years.
Hermitage vineyards are
essentially sitting like a
monk’s cap of granite atop
a very round hill directly
across the river from the
town of Tain (where
Valrhona chocolate was
born and is produced).
The best vintages for
Hermitage are always when
that granite cap is roasted
thoroughly in the sun.
Years of great heat like 99,
03, 09 & 10 are all
exceptional.
~~
Côte-Rôtie, M. Ogier
“La Belle Helene” 2003
(Bin 313) This is a wine
of great purity, soul
and spicy, hedonistic
character.
~~
Marcel Guigal bottles
three single-vineyard
Côte Rôtie. Every vintage
receives special attention
in the vineyard and the
cellar. The wines typically
spend 42 months in oak
casks during their
upbringing and often
seem to “die” in barrel.
A few years later they are
reborn when bottled.
Uniquely intense and
balanced individual
expressions; La Turque
is to Beethoven as
La Landonne is to
Brahms and La Mouline
is to Chopin.

I drink (note: drink,
not taste, think about,
ponder over, etc) more
Châteauneuf du Pape’s than
anything else. Why? For
satisfaction, complexity,
interest, flexibility with food
and a large window of
drinkability, a good
Châteauneuf-du-Pape is
hard to beat. Currently I
love the freshness and body
of 2006. The 2004's are
lovely, balanced and
drinking now.

The “El Nido” bottlings
are super interesting buys
for consumers of California
Cabernet. While they have
mammoth size & fruit, the
wines deliver a darker fruit
accent & mellower tannins.
~~
All the Cune wines are
bottled and then stored,
unlabelled, in the historic
cellars. They are stored
unlabelled because the
labels would quickly
deteriorate in the humidity
of these cellars. Plus, the
bottles might stay there for
decades, undisturbed.
Before release, the bottles
are hand cleaned and
labelled. Cune never recorks
its library wines. Recorking
exposes the wine to the
atmosphere and changes it.
The wines do not see the
light of day from the day
they are bottled until they
are released.

(Bin 2226x) is a magnificent
cru Barbaresco from a long

some time in the gym.

Notice the wines of
Elio Altare, one of the
key progenitors of the
modernist movement in
Barolo that began in the
1980's. His wines are
all beautiful and reflect
his precise methods in

lavish winemaking style
in the cellar.

Cabernet Sauvignon
vineyards in a bit cooler and
cloudier area in the Russian
River Valley meaning longer
hang times for fruit and
cooler nights (read: more
balanced acidity and softer
textures.)
~~
Mt. Eden Estate Vineyards
(Santa Cruz Mountains)
2009 (Bin 2038) One
of the historically important
California wineries. The
Cabernet is more mediumbodied than full, intensely
flavored black fruit, grilled
herbs and spicy oak on the
finish. The style is
reminiscent of the top
California Cabernets of
the 1970's. Lovely balance
for food.

(Southern Rhône) 2007 MAGNUM
- page 20 -
$1850
$1947
We’ve chosen a few
particularly ageworthy
wines to offer in large
formats in part because
the larger format
allows the wines to age
more successfully and
because of course, it is
always more festive to
have a big bottle at the
table. It is best to allow
us some decanting
time, or order
a bottle a day or two in
advance, so we can
properly care for it and
it can be served as
intended, the showstopping centerpiece of
your dinner party.
