This book of wine was assembled in order to introduce the concept of “boutique” or
“garage” wines.
All the wines presented to you today were carefully selected for their History & the
message they have to share
Following the concept of “Ampelography”, the identification & classification of
grapevines, we invite you to select your perfect wine according to the grapes used
for its making.
Our team is here to assist you on your choice, or simply share the numerous stories
that helped crafting this book of wine.
All prices are presented in HK$, subject to 10% service charge.

Chardonnay is one of the most common grape used for the making of white
wines, however, very few regions are able to completely master & change the
taste of the grape, sometimes giving it a deep & intense buttery flavor or some
other time developing freshness & minerality . The Burgundy & Beaujolais
regions in France, are the perfect example of the Chardonnay richness, from
one village to another, from one clos to another, the taste, intensity & aromas
will differ completely, offering to the wine amateurs an exceptional diversity of
choice…

Pinot Noir is probably one of the most difficult red grape to cultivate & understand.
It requires a cool climate, with a high level of control over parameters such as
humidity, wind & water exposure…Wines made from Pinot Noir are known to
produce some of the finest & most sought after wines in the world. When young
vintage will develop light peppery & cherry aromas, back vintages can easily
change into vegetal & even sometimes more animals flavors.

Merlot is the third most grown variety of grape in the world. It accepts all kind
of weather & can be used in blends or enjoyed on its own. When it comes to
harvesting, two main styles are used nowadays: In France & especially in the
Bordeaux area, an early harvest will be preferred, giving the wine its known
acidity, with very controlled tannins & a medium body aroma. The “International
style” however will prefer a late harvest, enabling the grape to develop more
full body aromas of plum & blackberry with velvety tannins.

Grenache & Syrah represents all the strength & complexity a wine can develop.
Both grapes need a hot & dry weather to be able to produce very deep, wild &
poetic wines. Grenache intensity & flavors have led France & Australia to use it
to produce naturally fortified wines such as Banyuls Syrah, which offers a more
balanced, deep wine, with firm tannins & its very distinctive aroma of liquorice.

“I drink it when I’m happy and when I’m sad. Sometimes I
drink it when I’m alone. When I have company I consider
it obligatory. I trifle with it if I’m not hungry and drink it
when I am. Otherwise I never touch it - unless I’m thirsty.”
Madame Lily Bollinger - London Daily Mail, October 17, 1961.
